Greetings!  It is great to be out of sweltering New York, and more importantly, reunited with my summering wife and kids in Oregon for a week.  I am blessed to have the ability to really focus on my true passions during my vacation: cooking for my in-laws, and guest-writing for a women’s lifestyle blog.  Good times.

Gazpacho

I know, I know, I know. Sounds super boring and uninspiring. But trust me, this is a GOOD gazpacho. I always try different gazpacho recipes as there are so many versions and varieties out there, but I always go back to THIS one. So use this recipe to create a simple, lovely, and delicious cold soup on a hot summer day. This recipe is loosely based off the gazpacho recipe from The Breitenbush Cookbook.

Quinoa Granola

Since I love granola, quinoa, and making granola, I thought trying out a recipe for quinoa granola would be a no-brainer. If you have been out of the health loop in the past several years, quinoa is considered to be a super food and one of the most healthy ingredients out there. It is protein packed, full of fiber, rich in magnesium, high in iron, and is overall magical. I first read a recipe for quinoa granola in Gwyneth Paltrow’s cookbook, but it took me months to find “quinoa flakes.” Once I found them, I was ready to go. And let me tell you…. quinoa granola is heavenly, light, sweet, crunchy and perfection.

* 1/2 cup of Extra Virgin Olive Oil

* 1/2 cup of maple syrup

* 3 cups of quinoa flakes

* 1 cup of shredded coconut

* 1/2 cup of sliced almonds

* sea salt

* 1/2 cup of chopped dates

Directions:

* Preheat oven to 400 degrees

* In a bowl, whisk together the olive oil and the maple syrup.

I do not recommend linking the whisk / spoon after this combination.

* Then, add the quinoa flakes and mix, followed by the coconut and almonds.

* On a parchment paper lined pan, spread the mixture out evenly. Place in the oven for 20-25 minutes, stirring occasionally and checking to make sure it is not burned.

Mango Tapioca

I love mushy food.  Like love.  It’s like I am a 90 year old woman with no teeth.  So what is one of my dream desserts? TAPIOCA!. I experimented and created my own LACTOSE-FREE (aka vegan with an egg) mango tapioca recipe. Refreshing, soothing, delicious. Enjoy!

Ingredients:

* 2 and 3/4 cups almond/soy milk
* 1/3 cup of sugar
* 3 tablespoons of minute tapioca
* 1 beaten egg
* 1 mango
* 1/2 cup of coconut milk
Directions:

*  Mix milk, sugar, tapioca and (beaten egg) in a saucepan and let mixture sit for 5 minutes.

I didn't listen to my own directions and simply placed the egg into the mixture before beating the egg. WRONG, beat the egg before you place it in the milk mixture.

Broccoli Tofu Peanut Dish

Here is a simple, fresh, and delicious vegetarian dish. One of my go-to mid-week meals that is filling, satisfying, and easy to make. Enjoy!

Ingredients

* 1 pound firm tofu

* 1 pound broccoli (including stems)

* 2 cups chopped onion

* 1 tablespoon canola oil

* 1 tablespoon grated fresh ginger

* 3/4 teaspoon salt

* 1 chopped scallions (green and white part)

* 3/4 cup peanut (or almond butter)

* 3/4 cup hot water

* 6 tablespoon rice or cider vinegar

* 3 tablespoon soy sauce

* cayenne to taste

Directions

* Cut the tofu into 1 inch cubes and place them in a pot. Cover the tofu with water. Bring to a boil and simmer for about ten minutes. Drain and set aside (this helps the tofu keep its shape)

* Cut the broccoli, shaving the tough parts of the stems off, but using most of the broccoli.

* Heat the oil in a skillet. After a minute, add the oil and onion. Cook for two minutes over high heat.

Although many people are haters (randomly, including my father), I actually love Gwyneth Paltrow. She is honest, open, beautiful, stylish, and resourceful. I am a big fan of her, her website, and her cookbooks.

This cookbook was released at the beginning of this month. Each recipe looks delicious and healthy. Plus, the pictures are gorgeous and makes you want to become a super model millionaire actress.

I love anything with coconuts. Coconut water, coconut lotion, sunscreen with a coconut smell, coconut flakes…you get the point. I am nuts for coco-nuts. And the most recent coconut obsession is creamy coconut “mylk” from Organic Avenue.

Lentil Meatballs

Channeling Gwyneth today.  After reading her GOOP website, I decided to cook up some lentil meatballs that she featured. AND HOLY SHMOLY, they are beyond delicious. BEYOND. So flipping delicious and tasty, that I could (and did), eat them several days in a row.

Ingredients:

* 2 cups green lentils

* 1 small chopped onion

* 2 eggs

* 1 cup of panko or breadcrumbs (sorry gluten-free people, it’s a must)

* 1/2 cup ricotta cheese

* 1/2 cup parmesan cheese

* 3 tablespoons tomato paste

* 1 pinch of dried thyme and dried rosemary

* salt and pepper, to taste

Directions:

* Preheat the oven to 375 degrees

* Cook the lentils (1 cup of dried lentils to 3 cups of water). Boil the water, put in the lentils, let them cook, lower the temperature, and let them sit for 30 minutes.

* Meanwhile, sautee the onion in a pan with olive oil until translucent. Add the dried herbs and a pinch of salt and pepper, sautéeing for about another minute or two until soft and fragrant. Turn off heat and set aside to cool.

Green Hummus

A vegan, gluten-free friend of mine (no bread or cheese — what is the point of life, then???) pointed me in the direction of this green hummus, inspired by this food blog, Namely Marly. Spinach and garbanzo beans in a vitamix. AMAZING. So easy to make, and so delicious to eat. A gold medal star for this recipe.

Ingredients:

*  1 can of chickpeas (garbanzo beans)

* 1/4 cup tahini

* 1 – 2 tablespoons of lemon juice (juice from half a lemon)

* 1/2 cup of water

* 1/4 cup of olive oil

* 1 teaspoon salt

* 1 teaspoon dried basil

* 2 cups of raw spinach

* Put all the ingredients into the vitamix

Egg Salad

Call me crazy, but I have been craving egg salad recently. I know — bizarre! (Especially since I am not pregnant… I mean, I better not be pregnant). I found this delicious recipe from 101 cookbooks (and slightly altered it). Trust me though; it is creamy, healthy, and ever so tasty.

* 1/2 bunch of chives (scallions will do if you can’t find chives)

* 3 stalks of celery

*  2 tablespoons of greek yogurt

* 1/2 tablespoon of dijon mustard

* salt and pepper, to taste

Directions:

* Boil 6 eggs. Now, HOW to boil eggs is key. And apparently I have been boiling eggs the WRONG way for my entire life. And I had no idea that I was doing it wrong. Until now. BIG MISTAKE. First, put the eggs in a pot of cold water until the water boils.

* Once the water starts to boil, take the pot off the burner and let it sit for 7 full minutes.

Juice Generation

Recently, I have become seriously into (nice way of saying “obsessed”) with Juice Generation‘s hot drinks (Juice Farmacy). Mind you, everything from Juice Generation is delicious (my favorites outside of the hot drinks include the pacific pineapple smoothie, the ginger miso tofu sandwich, and the amazing green acai bowl), but the hot drinks are especially addicting. They are warm, comforting, nutritious, and FIGHT OFF THE FLU EPIDEMIC!!! SHOO SHOO FLU!

Airplane Snacks

Whether I like it or not, I have somehow become an expert on traveling with kids. It is not my intention to be a jet setter, but because I live (a) far from my parents and friends on the West Coast and (b) in a cold weather state, it means that if I want to see my family and/or not freeze, I need to get on a plane. So, planes it is!

A lot of our life is spent at airports. Before Cruz turned 14 months, we went to the West coast 8 times. Our traveling schedule has slowed down with two, but we still spend a lot of time on planes.

As a family, we have several go-to techniques on how to manage air travel with young ones (and ourselves).  These include: taking the early morning flights (to avoid the potential of being delayed and then having more wait-time, not that that worked last time we flew), stocking the iPad with games/videos, bringing presents for take-off and landing, having extra sets of clothes/toys/books/activities, and having the perfect options for food. In terms of food..

Harmless Harvest Coconut Water

I recently discovered gold. Not real gold, but a new coconut water brand. But this stuff is so pure, so real, so fresh, that it actually feels like I found a piece of gold. More like a pot of gold.

Best Muffins Ever!

So, I get it. I know I am all about making new “healthy” concoctions and swearing that they are delicious. And then, most people are turned off because they are “too healthy.” But let me tell you, if there is only ONE recipe you make from this blog, then MAKE THIS ONE. I promise that this recipe will give you the most delicious, edible, easy, amazing, scrumptious, and crowd pleasing “healthy dessert” of them all. Homemade Granola

I am a granola snob (fun game to play: what are you a snob about? For example, I am a granola snob as well as a coffee, grocery store, shampoo, and gym pant snob. I just have expectations for these items to be the best of the best. And if they aren’t, then I am snobbily unhappy). I absolutely love granola, and as you may recall, absolutely love Blackberry Farm Granola. I have tried to make my own granola but have never been satisfied (I am a tough critic), until NOW! Big cluster maple granola from the cookbook “The Smitten Kitchen Cookbook” did the trick. And not just with the granola recipe, but with every recipe. Thank you, Smitten Kitchen!

* 3 cups of old-fashioned rolled oats

* 1 cup of unsweetened shredded/flaked coconut

* 1 cup of crushed walnuts (or any other type of nut)

* 2 tablespoons of olive oil

* 1/2 teaspoon of salt

* 1/2 cup of maple syrup

* 1/4 teaspoon of cinnamon

* 1 large egg white

* 1 1/2 cups of dried fruit (raisins, cranberries, raisins)

The Smitten Kitchen cookbook. Everything about this is to-die-for. First of all, it reads like a novel, the pictures are divine, and the recipes themselves are winners. I can’t wait to try more recipes!

Directions:

* Preheat oven to 300 degrees

* Combine all ingredients but the egg white and dried fruit in a large bowl. Make sure to mix evenly.

Pumpkin Pie Smoothie

Thanksgiving is right around the corner (??????), so there is nothing like a pumpkin pie dessert to get you in the mood! And pumpkin pie smoothies have a bit of everything I like: blended texture, pumpkin flavor, healthy ingredients, and a sweet aftertaste. Pumpkin Pie Smoothie! Lemon Ginger Tea

I am sick. Sick of being sick, too. My head throbs, my ears ring, my nose runs, and my throat burns. Yes, cry me a river — I hear the violins loud and clear — but being sick is the worst. Nothing tastes good, everything is melodramatic, and I am boring and un-fun. The only thing I feel good about is my ability to make and drink lemon ginger tea.

For whatever reason, we have about 3 dozen different types of cups. No surprise, I am very specific about what size cups I like to use, and for what type of liquid/food. Coffee cups need to be mid size, tea cups are slender, and big cups are for ice cream and cereal. Handles are preferable.

Ginger is known for its magical characteristics that make it a natural remedy for many ailments. It is well known as a remedy for travel sickness, nausea and indigestion (I chewed on ginger chews daily while pregnant to help curb my morning sickness). It is a warming remedy, ideal for boosting the circulation and lowering high blood pressure. Ginger is anti-viral and makes a warming cold and flu remedy.  Due to the spicy flavor and warming qualities of ginger, making a lemon ginger tea is perfect for a cold. Both lemons and ginger are high in vitamin C and together, they temporarily relieve sinus pressure, a burning sore throat, and can temper coughing.

Flavored Kale Chips

Way back when, when the blog was brand new (almost a year ago!), I wrote about my obsession with making Kale Chips. So healthy, so easy, so delicious. I thought my homemade kale chips were the best snack in the world. And although they are great, I came across New York Naturals Kale Chips, sold at my local Whole Foods, and there is simply no comparison.

Locally made, these are sold at more than 200 stores in New York and on the East Coast. But for my West Coast friends, they are even sold online.  I first tried these at Whole Foods, then went online and got 4 boxes, and now, I just placed an order for 10 more. Fava Beans

Fava beans are my mother’s favorite bean. And beans are my mother’s favorite hobby. And yes — beans ARE a hobby (except for the refried beans in a can …). It is almost an art. Soaking, peeling, boiling, creating a dish — it involves a lot of steps, thoughts, love, and time.

Fava beans are the big magic beans that you imagine in Jack and the Beanstalk. Huge, green beans located in a floppy, large pod, fava beans are one of the oldest cultivated plants and are among the easiest to grow. Most of the world loves to eat fava beans, aside from Americans.

Sprouting

Sprouting is the practice of germinating seeds that can then be eaten raw or cooked. Sprouts are extremely healthy and rawists, vegans, omnivores, and carnivores all love them. Growing sprouts at home is becoming more and more trendy.  According to my mother, “Sprouting is very popular with the young generation.”

Grocery stores (healthy ones) sell sprouting tools and seeds that allow one to germinate sprouts at home. The process is quite simple and just takes time and water. And then after the germinating process is done, you have a lot A LOT of sprouts that you need to eat– which is great and healthy!  Long story short, you place the seeds with water in a sprouting vessel and let them sit for several days at room temperature, rinsing them every so often with water. And voila, sprouts.

Sprouts are incredibly nutritious and contain lots of vitamins, minerals, proteins, and enzymes.  Sprouts also deliver these nutrients in a form that is easily digested and assimilated.  In fact, they improve the efficiency of digestion. Sprouts are also deliciously fresh and colorful and add a great crunch and speckle of color to any dish!

This past weekend, I was given a lesson by my ever-so-smart mother on how to sprout. We sprouted three different types of sprouts, using three different types of vessels. Each sprout is fairly different and the three different containers can be used with any type of sprout. We just used different ones in order for me to have a solid lesson! We used a mason jar, a bag, and a tray (each are built specifically to grow sprouts).
