A GP lover, I was on a mission to make the Jumbo Banana Muffins from Goop over the weekend, and boy, did they turn out amazing. GP knows what she is doing (or her staff does). Healthy — refined sugar free and gluten free — these muffins will be a huge hit in your office / home / belly. These moist, gooey muffins have an almond butter filling — an extra special yummy surprise in the middle.
Ingredients for the batter:
* 1 ½ cup almond flour
* 1 ½ teaspoon baking soda
* 1 tablespoon cinnamon
* 1 teaspoon salt
* ¼ cup melted coconut oil
* 4 eggs
* ¼ cup maple syrup
* 4 over ripe bananas, smashed
Ingredients for the filling:
* ¼ cup of almond butter
* 1 tablespoon honey
* 1 teaspoon cinnamon
Directions
* Pre-heat the oven to 350 degrees.

Mix all the dry ingredients of the batter together (almond flour, baking soda, cinnamon, and salt).

Mash the 4 bananas together (or “hire” help to smash it for a full 20 seconds and then actually do the work yourself).

In a separate bowl, combine and whisk the wet ingredients (eggs, maple syrup and coconut oil).

Smashed / mashed bananas

Combine the wet and dry ingredients together.

Add the bananas.

In *another* bowl, make the filling. Simply combine the almond butter, honey and cinnamon.

Filling.

In the silicone jumbo tins, add 1/4 cup of the batter.

Add 1 tablespoon of the filling, and then cover it with 1/4 cup of the batter.

Add a banana on top for garnish.

Ready to bake for 20-25 minutes.

YUM!

End result — how good do they look?

Paired with coffee – muy bueno.
So if I were you, (and you were me), I would make these ASAP. Promise. Pinky swear. Cross my heart. Have a good weekend! Ken comes out tonight for the weekend — celebrate with some banana muffins.
