Pickled Green Beans

Typically in summer in Oregon, I do a lot of fruit harvesting and cooking / baking / figuring out what to do with all the fruit. But this year, there are less fruit options due to a big Ice Storm that hit Oregon earlier this year. So instead of the normal peach picking I do around this time, we went green bean picking — yep, green beans! Despite not being the best treat to eat when picking, it was fun to be on the farm and collecting the beans.

 

I didn’t know what to expect — I thought the green beans would be on a bush — but nope, it is a plant that you have to squat to pick.

My right arm — aka, my son, Cruzzie. He didn’t pick, rather just watched me pick and encouraged me and took care of the dog.

We collected 6 pounds of green beans! Less than $12 for all of them!!!!

 

We decided to pickle them — 6 jars of a spicy dill classic recipe and 6 jars of an Asian vibe one. They required all different ingredients, but luckily, they are all affordable and easy to get!

 

Blached them and stuffed them into mason jars.

 

I found the two recipes on two different sites. The classic one here. And the Asian one here. Both these recipes are pickling recipes that require refrigeration after — not the type that you sterilize the top and put on the shelf in the pantry. So yes, they take up more space, but hopefully, they are so delicious that you eat through them quickly.

 

Filled them up with all the different ingredients.
