Healthy Banana Muffins

A GP lover, I was on a mission to make the Jumbo Banana Muffins from Goop over the weekend, and boy, did they turn out amazing. GP knows what she is doing (or her staff does). Healthy — refined sugar free and gluten free — these muffins will be a huge hit in your office / home / belly. These moist, gooey muffins have an almond butter filling — an extra special yummy surprise in the middle.

Paired with coffee - muy bueno.

Ingredients for the batter:

* 1 ½ cup almond flour

* 1 ½ teaspoon baking soda

* 1 tablespoon cinnamon

* 1 teaspoon salt

* ¼ cup melted coconut oil

* 4 eggs

* ¼ cup maple syrup

* 4 over ripe bananas, smashed

* ¼ cup of almond butter

* 1 teaspoon cinnamon

 

Directions

 

* Pre-heat the oven to 350 degrees.

 

Mix all the dry ingredients of the batter together (almond flour, baking soda, cinnamon, and salt).

Mash the 4 bananas together (or "hire" help to smash it for a full 20 seconds and then actually do the work yourself).

In a separate bowl, combine and whisk the wet ingredients of eggs, maple syrup and coconut oil).

In the silicone jumbo tins, add 1/4 cup of the batter.
