Green Goddess Dressing

In a need to have more veggies and green in my life (winter makes me only want carbs), I decided to search the best recipe for Green Goddess Dressing. After a lot of research, I chose the Green Goddess Dressing from the NYTimes and I am so happy with the end result. It is delicious, fresh, and easy to eat with crudites or salads — a great way to add more green to my day.

 

Ingredients:

 

* 1 cup parsley leaves

* 1 cup spinach leaves

* 2 tablespoons tarragon leaves

* 3 tablespoons chived

* 2 anchovy fillets

* 3 tablespoons fresh lemon juice

* 1 tablespoon plus 1 teaspoon of sherry vinegar

* 1/3 cup grapeseed oil

* 1/2 cup mayo

* salt and pepper, to taste

 

Directions:

 

Blend everything except for the mayonnaise. After the herbs, lemon, oil, and vinegar are all blended, add the mayo and blend some more, and VOILA! Finished! So good!

 

Green on green.

Yes, there are anchovies in this dressing but it doesn’t taste like it!

Grapeseed oil is also a pretty green.

Blend.

Then add mayo.

So pretty, and so delicious!
