Lalo Cookies

I posted this a million years ago, but they are SO good that I wanted to post them again. Lalo cookies from Gwyneth Paltrow. Everything about them I love — a bowl mix recipe, wholesome ingredients, delicious for breakfast / dessert / snack. They are so good that you cannot just eat one.

Ingredients:

  • 4 cups barley flour (I could not find, so used spelt flour instead)
  • 3 cups raw whole almonds crushed in a food processor
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup canola oil
  • 1 cup maple syrup
  • jam (I used two different kinds just to spice things up)

Directions:

Dry ingredients in one bowl.

All of them together.

Mix them together.

Form little balls (1 tablespoon approximate in size) and then make a spot in the middle to add jam

The little dip for the jam.

The jams (and we did some with nutella just to be CRAZY).

Put in oven (375 degrees) for 18-20 minutes.

Look how beautiful!

so good.

It makes around 50 or so cookies. You can freeze them too.

They are sturdy, healthy, can’t go wrong cookies. Hope you are having a great week!
