Green Pancakes

I realize that blogs are a dying breed and have been replaced by instagram, tik tok, snapchat, twitter, etc….That said, I still read two blogs on a daily basis and I love them dearly. I dropped most other blogs when I realized most of their content was sponsored or no longer of interest. But I am thankful for Cup of Jo and Cupcakes and Cashmere that continually publishes authentic, honest, beautiful, helpful, and interesting content. Earlier this week, I found a post on Cup of Jo about green pancakes and I knew immediately that I had to make them. So glad I did because they are DELICIOUS. So whatever you are doing right now, stop, and make the green pancakes. Thank you, Cup of Jo!

 

Ingredients:

 

* 5-6 cups of dark greens, like kale!

* 2 cups oats

* 1.5 bananas

* 1 cup greek yogurt

* 1/3 cup flax seed oil

* 4 eggs

 

Directions:

* Put all the ingredients together in a blender and BLEND! So easy!

 

Hardest part of this recipe is taking the kale leafs off the stems.

The more greens, the better. I blended one portion first, and then added more greens (2 heads of kale!!!)

Looks like a smoothie!

Perfection! Especially with jam (my favorite pancake topping!) or maple syrup or peanut butter or nutella. The sky is the limit!

I hope my kids like them…

 

I am so excited by this new recipe and I can’t wait to make them every week! They take a little bit of time (just the frying on the stovetop) so I made the whole batch and will eat them throughout the week for breakfast or snacks! Don’t green pancakes make you happy?
