Kelp Salad

Recently, I have heard so many good things about kelp and its nutritional benefits. First and foremost, is kelp a noddle or a plant or a string? What is kelp??? Kelp noodles are a sea vegetable in the form of an easy to eat raw noodle. Made of only kelp (a sea vegetable), sodium alginate (sodium salt extracted from a brown seaweed), and water, Kelp Noodles are fat-free, gluten-free, and very low in carbohydrates and calories.

Ingredients:

 

Konaberry

 

* 12 ounces of kelp

* 1 head of kale

* 1 tablespoon of tahini

* 1 tablespoon of sesame oil

* juice from 2 limes

* 1 tablespoon of soy sauce

 

Directions:

 

Rinse the kelp noodles and let sit in warm water for 10 minutes.

The texture of the kelp is crunchy with a tad of slimy.

Mix together the salad ingredients.

Mix together the salad ingredients.  I made mine simple but you can add a number of different ingredients to spice things up, including avocado, scallion, cilantro.

Make the dressing: tahini, soy sauce, lime, sesame oil.
