NYTimes Peanut Butter Cookies

Yes, I know, when I post a recipe, you can just go to the website that I post — which I am totally fine with — because I just want you to know that I LOVE THIS RECIPE AND THEY ARE AMAZING AND YOU NEED TO MAKE THEM RIGHT NOW. The best. Like hands down, the best peanut butter cookies I have ever ever tried and I am not sure how much is too much……but I made them yesterday, and I cannot stop eating them and all I want to do is eat them. Ingredients:

 

simple ingredients.

 

  • 1 cup (2 sticks) unsalted butter, room temperature

  • ¾ cup granulated sugar

  • ¾ cup (packed light brown sugar

  • 1 heaping teaspoon kosher salt

  • 2 cups unsweetened peanut butter, creamy or chunky

  • 2 eggs, room temperature

  • 2 cups all-purpose flour

  • Flaky sea salt and coarse sugar for sprinkling

 

 

Directions:

 

  • Heat oven to 350 degrees and line 2 baking sheets with parchment paper Mix together the butter and sugars until smooth and fluffy. Then ,add the peanut butter and eggs, and mix. Finally, add the flour and salt and mix.

 

  • Then scoop and put on the prepared lined pans. Since they don’t change shape, you can put them more closely together than you would with other cookies.

 

  • Then, add sugar and salt to the top. Bake for 12-15 minutes. And voila. DONE.

 

On the lined sheets.

Sprinkled with sugar and salt.

Powdered Peanut Butter

I consume a ridiculous amount of peanut butter (true fact: a friend calls me the “Peanut Butter Princess”) as it is filling, energy rich, protein dense, and DELICIOUS. I eat it year round, especially during marathon training season. My one reservation about peanut butter is the massive amounts of fat and oil…so when I found PB2 in Whole Foods, it was a DREAM COME TRUE! (I had to pinch myself).

Banana/PB Cookies

Nothing is better than a healthy cookie! Based off of Nikki’s Cookies from 101 Cookbooks, I set out to make a new and different version of these tasty bites. Truth is, I wanted to make Nikki’s Cookies actual recipe, but I didn’t have most of the ingredients, so I had to improvise…. but let me tell you, these new cookies still tasted delicious and I would make them again in a heartbeat!

Ingredients:

* 2 large, ripe bananas, well mashed
* 1 teaspoon vanilla extract
* 2 cups of flour (whole wheat, normal, almond, any variety works)
* 1 1/2 cup coconut, finely shredded & unsweetened
* 1/2 teaspoon cinnamon
* 1 teaspoon baking powder
* 1 cup of nut butter. Peanut, almond, or cashew.

AND LOTS AND LOTS OF CHOCOLATE CHIPS! Healthy, right?

* First, mush up the banana making it soft and gooey. The banana acts both as the sweetener and the fat in the cookie. Thank you, Mr. Banana.

Favorite Nut Butters

Frequent Josie Girl Blog readers know that (1) I hoard food and (2) I can eat an entire jar of almond or peanut butter in a sitting. Yes, both are problems. But both make me happy. SO…..here are my favorite peanut and almond butters, as well as runner- ups.

My most recent find is an amazing peanut butter company that specializes in a twist of flavors. PB Crave. Once again — peanut butter with a splash of fun. Right up my alley!

The name is oh-so-fitting, because once you have a teaspoon of this peanut butter, you will end up eating at least five cups. You will *CRAVE* this treat.

And yes, I spend time on the internet searching for “unique peanut butter flavors.” And let me tell you, this peanut butter is AH-MAZING. Seriously, it is dangerous having it in the house because I can easily eat half a jar with a spoon. I eat crackers and bread, just so I can eat the peanut butter and not look as pathetic. It is delicious with anything and everything. For reals.

Another amazing feature of this peanut butter is that you can buy it on amazon. And that adds instant value and awesomeness to any product. Especially peanut butter.
