Green Goddess Salad

My daughter does not eat salad. Like ever. Never have I ever seen her eat a salad before. And yet, somehow, she not only devoured this entire salad at a friend’s friend’s house (yes, friend of a friend), but demanded that I get the recipe and make it for her. So when that happens, you FOLLOW THROUGH. Thank you, Dana, for giving me a new salad to feed my child and finally saying she eats salads! Ok, so this salad is from Baked by Melissa (who knew she did anything other than cupcakes?) — and trust me, make it. Your non-salad-eating-child will change their mind. It is basically a lot of healthy, nutritious, delicious greens all in one — dressing and the salad itself.

Ingredients:

GREEENNNNNN

For the salad

  • 1 small head green cabbage
  • 3-4 baby cucumbers (or 1 large cucumber)

For the dressing:

  • 1 cup basil leaves
  • 1 cup fresh spinach
  • 2 cloves garlic (I skipped this)
  • 1 small shallot
  • 2 lemons, juiced
  • 1/4 cup olive oil
  • 1/4 cup nuts of your choice (I used raw, unsalted cashews)
  • 1/3 cup nutritional yeast
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar

Directions:

Chop the salad. And put all the ingredients for the dressing in the blender, and blend. And voila!

Slice — but even smaller than this. I had to cut them a second time (but didn’t photograph them)

And cucumbers. VOILA the salad.

The dressing! so easy.

MOST DELICIOUS green goddess ever.

The salad — promise you will be obsessed.

Try this recipe and let me know what you think! I promise you this green goddess dressing is unlike any other dressing — so so so good.
