Once again, I find myself wanting to cook everything from a Gwyneth Paltrow cookbook — she gets me every single time (#Slay). My most recent recipe is Chocolate Cinnamon Overnight Oats — and in a span of four days, I have made it twice — simple, easy, healthy, and oh-so-good.
Ingredients:
* 1/4 cup quick-cooking oats
* 1/8 teaspoon ground cinnamon
* 1/2 teaspoon raw cacoa
* A pinch of salt
* 1/4 teaspoon vanilla
* 2/3 cup of almond milk
* 2 dates cut into small pieces
* 1 tablespoon of chia seeds
Directions:
* Combine all the ingredients in a bowl and mix well. YEP, that easy!!

Dates. Slice.

Best vanilla extract ever. Penzeys Spices.

Put all ingredients into a mason jar (true sign of an Oregonian)

Chia seeds are awesome. And always get stuck in between all of my teeth.

Before you shake it.

Shake shake shake (with the lid tightly twisted on).

Place in fridge overnight.

Here is my fridge!!!! (I know you want to see inside #Voyeur). And for those of you with eagle eyes, I did not purchase containers of pre-cut pineapple and watermelon. That was a #fail from Fresh Direct where they gave me a box of those items plus 100 yogurt tubes.

So good. Can you taste it through this computer screen? DELICIOUS!

The top (just mix in the cinnamon and chocolate that rests on top).

Spoonful of yummy crunch, sweet, filling, smooth, yum.

The cleanup — not so much.
So easy and super delicious. Basically, dessert for breakfast. Why not???? Thank you Gwyneth!
