Chia seeds are a super food. Incredibly healthy and nutritious, they also make an awesome pudding. Try it!
Ingredients:
* 1/2 cup coconut milk (lite or full)
* 1/2 cup almond milk (or cow or soy)
* 1/3 cup chia seeds
* 1 ripe mango, cut
Directions:
Cut the mango. And don’t suck on the meat from the pit — many women are severely allergic to mango pits, and don’t know it….until they look like a clown.
Pour the liquids into the blender, along with the mango.
Messy. But we don’t cry over spilled milk.
After the milks and mango are blended, add the chia seeds.
Do not blend the chia seeds with the puree — just mix them in (I was being ‘green’ and didn’t want to use another bowl so just mixed the seeds into the puree
Store in fridge for several hours
And eat. WAIT THAT ISN’T MANGO PUREE? IT IS MAC AND CHEESE! Same thing. 🙂
After the pudding sets in the fridge for several hours, dig in and enjoy! Have a great weekend!
