Mango Tapioca Pudding

For some unknown reason, I had this incredible desire to eat mango pudding. So, I made some! It tasted like summer and vacation!




* 3 cut mangoes

* 1/4 cup of condensed milk

* 1/2 can of unsweetened coconut milk

* 1/2 cup of tapioca balls

* 1/2 teaspoon of vanilla




* Whichever tapioca you choose, follow the directions. The ones I chose happened to be the most annoying ones and required to be soaked overnight…..


* Put all the ingredients BUT THE TAPIOCA together in to a blender and BLEND! You can just eat it like that if you want! It is so good!


Then add the tapioca together with the pudding and stir. It looks weird. It is not. I promise you.

Yes it looks chunky, but the tapioca adds some texture and fun. It is ever so delicious. And if you prefer more smooth texture, then make the pudding and don’t add the tapioca!


Of course, I am the only one in the family that likes pudding, so now I have a huge vat of mango pudding to eat. Good thing it is delicious and I love it!
