For some unknown reason, I had this incredible desire to eat mango pudding. So, I made some! It tasted like summer and vacation!
Ingredients:
* 3 cut mangoes
* 1/4 cup of condensed milk
* 1/2 can of unsweetened coconut milk
* 1/2 cup of tapioca balls
* 1/2 teaspoon of vanilla
Directions:
* Whichever tapioca you choose, follow the directions. The ones I chose happened to be the most annoying ones and required to be soaked overnight…..
* Put all the ingredients BUT THE TAPIOCA together in to a blender and BLEND! You can just eat it like that if you want! It is so good!
Of course, I am the only one in the family that likes pudding, so now I have a huge vat of mango pudding to eat. Good thing it is delicious and I love it!
