Apricot Coconut Cashew Truffles

My new favorite dessert from Gwyneth Paltrow’s most recent cookbook “The Clean Plate”: apricot coconut cashew truffles! Super easy to make, delicious to eat, and ever so healthy.

 

No bake, no sugar, oh so YUM truffles.

Ingredients:

 

* 1⁄2 cup dried apricots

* 1⁄2 cup raw cashews

* 1⁄2 cup unsweetened shredded coconut

* zest of 1 lime

* A pinch of flaky sea salt

* 1 tablespoon water

 

 

Directions:

 

Only difficult thing is to zest a lime — and that really isn’t that difficult….

Colorful layers! Note — don’t use a vitamix like I am in this picture. It is too hard to blend. Use a cusiniart instead!

Blend!

Roll in to balls and then place in the fridge to set. Then, store in fridge and eat when you want some deliciousness!
