Raw Brussels Sprout Kale Salad

Inspired by What’s Gaby Cooking, I have been making a raw brussels sprout kale salad weekly. Basically, it is shaved brussels sprouts, finely chopped kale, and a variety of nut and fruit to give it some JAZZ.

This week's variation is some walnuts, manchego, and some raisins.

OK, so you get it, you just add whatever you want to some brussels and some kale and it tastes good. But to make it go from GOOD to delicious, you have to have the right dressing. And here it is!!!!

 

 

* 1 lemon, juiced

* 3 teaspoons red wine vinegar

* 1/2 cup olive oil

* 2 tablespoons minced shallot

* 3 cloves garlic, minced

* Coarse salt and freshly cracked black pepper to taste

Whisk! and TADA!

Then all you do is smother it on to the salad and serve. Deliciousness!
