Not since 1997 have I been as into hummus as I currently am. Major mega hummus kick. Currently, here are my two favorite hummus (plural version?) to eat!
Edamame Hummus 
Creamy, rich, vegan, and no garbanzo beans! Edamame is a baby soybean and is high in protein, dietary fiber and micronutrients, particularly folates, magnesium and vitamin K. Aside from the nutritional value, it is so delicious! I love eating this hummus with carrots, snap peas, or my favorite Fiesta Lime Rice Chips .
Although not vegan as there is cheese in the hummus, it is to die for good. I kinda want to eat it all up with a big fat spoon and call that my meal. I mean, who needs something to dip it in, when you can just eat the dip? HOLY COW SO GOOD.
I want to try to make a DIY Spinach Hummus….anyone have a good recipe up their sleeves (or link online?). Hope you have a great weekend! We will be relaxing and doing the deja-vu-on-repeat-Eugene style.
