Oatmeal Pancakes

What to do with leftover oatmeal? OATMEAL PANCAKES! All you need is your previous day’s oatmeal and some maple syrup and VOILA, another meal. This recipe was created by my ever-so-resourceful-brilliant-mother who has an amazing ability to manipulate leftovers into a whole new delicious meal.

* Leftover oatmeal

* “some” maple syrup

* Butter or oil for frying

Directions:

* Mix 1/4 cup or less of maple syrup in with the oatmeal (this helps glue the oatmeal together)

* In a pan, melt butter or oil. Then press the balls of oatmeal down into pancakes and let them get golden brown. Then flip to other side.

Heat the oil.

* Once both sides are golden, serve and devour.
