Homemade Granola

I am a granola snob and nothing makes me happier than eating delicious and great granola. I have yet to find a homemade granola recipe I love — until now. And now I am obsessed. This granola is not overly sweet, delicious and has the perfect mixture of nutty, sweet, and grains. The beauty of it is that you can add whatever you want to customize it to how you love granola!

Homemade Baklava

I love most desserts (yes, I know, sugar isn’t good for you, but I love it), but especially baklava. It is one of my absolute favorites (along with red velvet cake, key lime pie, blueberry crisps….so many), and yet I have never made it myself. So during a heat wave in Oregon, I decided IF NOT NOW, THEN WHEN, and made my first homemade baklava, and let me tell you, it is delicious and I plan to make it again! It is that good!

Kale Caesar Salad

I have always loved kale (Ken even considered naming our son, “Kale” instead of “Cruz” — true story), but this kale caesar salad has taken my love of the dark leafy green to a whole new level. Like, I could eat four heads of kale in one day and be happy and content. This is an easy salad, with a super tasty homemade dressing that lasts in the fridge for several weeks. Once I discovered the recipe from Epicurious, I have literally made this salad 2-3 times a week. I can’t stop, won’t stop, why stop. So here is the recipe.  Enjoy!

Knit Liberty Print Dress

In addition to having a talented mother-in-law, I also have a skilled mother. Lucky for us, my mother spoils me rotten with her handmade knit creations for the kids and myself. I have countless projects that she has made for me; all that I will keep forever and ever. She is hands down the most crafty, talented, creative woman I know. Not only does my mother have a full time job, cook better than any chef, dance flamenco multiple times a week, and care for her children and grandchildren (and husband), but she also knits / sews / embroiders every single day. She has multiple projects at once and is never sitting doing nothing. No internet surfing, no TV watching, just plain good ‘ol fashioned fun. Here is one of my mother’s most recent creations. It is a dress made for Tusia (our nickname for Zoe) — knit on top with Liberty print fabric on the bottom (that of course, she sewed together). I am a proud daughter! Check it out!
