Miso Sweet Potatoes

SO easy, so simple, and oh so good. Roasted miso sweet potatoes! Great as a side dish, perfect for leftovers!

 

Who doesn’t love the color orange?

Ingredients:

 

 

* A couple of sweet potatoes

* 2 tablespoons of olive oil

* 1 tablespoon of miso paste

 

Directions:

 

* Whisk together the olive oil and miso paste. Then put the diced sweet potatoes in the bowl and combine all together.

 

If you are making more than 2-3 sweet potatoes, the ratio of the olive oil to miso is 2:1. And just add enough to coat them.

Whisk together to form a gloopy paste.

The only tedious part of this recipe is the dicing of the sweet potatoes (and peeling beforehand).

Mix

 

* On a parchment paper lined pan, distribute the sweet potatoes

* Roast at 450 degrees until golden!

 

Pre baking. And golden orange post baking.

 

So good — no extra salt or seasoning, perfect just as! Great on salads, alone, in scrambled eggs — you name it!
