I always crave sweets right after Halloween, but instead of grabbing a Snickers (which are so delicious), I decided to make nut butter chocolate truffles with no sugar. They turned out absolutely delicious and I highly recommend making them. SO GOOD. Plus, once you make them, you put them in your freezer so you can have a stash for a long time!
Ingredients:
- * 2 cups of nuts (I used almonds, but you can use any nuts)
- * 10 pitted dates
- * 1/2 teaspoon cinnamon
- * 2 tablespoons coconut oil
- * 3 tablespoons maple syrup
- * 3 tablespoons cocoa powder
- * coarse sea salt
Directions:
In a cuisinart, pulse the nuts until they form a loose butter / firm flour. Add the dates, and cinnamon, and blend together. Then, line a pan with wax sheet, and with form little balls with your hands.
To make the coating, use a double boiler (or in my case, a pot inside of another pot), melt the oil, syrup, cocoa powder. Once all melted together, dump the nut butter balls into the coating, then take them out with a spoon or fork and put on wax paper. Once completed, place the pan and the truffles into the freezer to harden.
They are best when eaten cold, but should be frozen (otherwise they melt). Enjoy! So delicious. Rich, sweet, but not overly so! The perfect combination!
