Roasted Kale / Brussels / Broccoli

OK, this is the easiest recipe EVER, but it is so good that I have been re-creating it  (or some variation) for the past several weeks. Lunch, snack, dinner, WHATEVER…. I have even eaten it for breakfast! What is it? Basically, roasted veggie with pine nuts, goat cheese, olive oil and salt. I know, glamorous and sophisticated recipe, right?

Ingredients:

 

* Some type of green (broccoli, kale, and / or brussels sprouts)

* Goat cheese

* pine nuts

* olive oil

* salt

 

This batch was made with a mixture of brussels and kale. Fresh Direct (a grocery delivery service in NYC) makes it even easier as they sell a pre-chopped combo of these two veggies. So literally, I just had to put the toppings and voila.

So what do you do? You literally turn the oven on anywhere between 375 and 425. Then, you place chopped veggies in a pan, coat the greens with olive oil and salt, then you sprinkle goat cheese and pine nuts, and you bake it until it’s ready. SO good though. SO SO good.
