Chipotle Sweet Potato Soup

My Meatless Monday Meal: the soup, cauliflower / garbanzo dish, and kale salad. MY HEAVEN.

Special Saturday post!  This was supposed to go out yesterday (per the normal M/W/F schedule), but there is some exciting stuff going on in the Natori household/corporate world that got things sidetracked.  More on that next week..  ANYWAY….

Recently, I had lunch at one of my close friend’s house where she served me this velvety and incredible soup. So of course, I had to make it the very next week (best form of flattery). This soup is rich, *spicy*, creamy, and healthy. But without the guilt or dairy. YUP, idol Gwyneth Paltrow does it again (and again and again and again) with this winning soup recipe. A perfect and filling soup for cold winter months. Enjoy!

* 2 peeled and diced sweet potatoes (should be around 6 cups)

* 1 diced red onion

* 1 1/2 teaspoons of chipotle peppers in adobo sauce

* 3/4 teaspoons of cumin

* 6 cups of vegetable / chicken broth

* 5 sprigs of cilantro

* salt and pepper to taste

 

Directions:

Peel and chop the sweet potatoes.

Dice the red onion.

Take 5 sprigs of cilantro and rope them together.

Cumin and chipotle peppers.

Cumin and chipotle peppers (I initially thought that there was a typo on this can.  Unfortunately, not – multiple spellings.  That would have been funny.)

In pot with the hot olive oil, place the diced red onions, cumin, and cilantro sprigs. Mix together on medium heat for 10 minutes.

Then add the chipotle peppers.

And sweet potatoes. Mix together.

Place 6 cups of vegetable or chicken stock to pot. Let boil, then reduce the heat to simmer and cover for 30 minutes.

I gave a bowl of soup to one of our doormen (Hi Fab! He also reads the blog #NoSecretsForMe) and he love love loved it. And Fab is an inspiration: just by a change in his food intake, he has lost about 100 pounds, he is literally HALF his size. And he was able to eat this and liked it! Which means, it is good for you but rich and delicious at the same time. Perfect for this freezing cold weather (in NYC). Hope you have a great weekend!

  3. Do you think this would also work with butternut squash in place of or half and half with the sweet potato?
