Hummus Kick

Not since 1997 have I been as into hummus as I currently am. Major mega hummus kick. Currently, here are my two favorite hummus (plural version?) to eat!

Creamy, rich, vegan, and no garbanzo beans! Edamame is a baby soybean and is high in protein, dietary fiber and micronutrients, particularly folates, magnesium and vitamin K. Aside from the nutritional value, it is so delicious! I love eating this hummus with carrots, snap peas, or my favorite Fiesta Lime Rice Chips.

Although not vegan as there is cheese in the hummus, it is to die for good. I kinda want to eat it all up with a big fat spoon and call that my meal.  I mean, who needs something to dip it in, when you can just eat the dip? HOLY COW SO GOOD.

This is a typical meal at the Proskurowski Eugene household. It is a raw vinegar coleslaw, a fava bean salad, some breaded zucchini and the two different hummus mentioned!

I want to try to make a DIY Spinach Hummus….anyone have a good recipe up their sleeves (or link online?). Hope you have a great weekend! We will be relaxing and doing the deja-vu-on-repeat-Eugene style.
