Mango Chia Pudding

Chia seeds are a super food. Incredibly healthy and nutritious, they also make an awesome pudding. Try it!

 

After the milks and mango are blended, add the chia seeds.

* 1/2 cup coconut milk (lite or full)

* 1/2 cup almond milk (or cow or soy)

* 1/3 cup chia seeds

* 1 ripe mango, cut

 

Directions:

Pour the liquids into the blender, along with the mango.

Do not blend the chia seeds with the puree -- just mix them in (I was being 'green' and didn't want to use another bowl so just mixed the seeds into the puree

store in fridge for several hours.

And eat. WAIT THAT ISN'T MANGO PUREE? IT IS MAC AND CHEESE! Same thing. :)

  1. I am trying to incorporate chia into as many dishes as possible. It is a true superfood, and I love it.
